
Dr. Dufault's mission is to determine how diet, nutritional deficits, and heavy metal exposures, studied at food research institutes, change gene behaviors to create conditions for the development of diseases or disorders.

In 2009, Dr. Dufault and her collaborators at food research institutes developed and published the first nutritional epigenetics model to explain how dietary factors influence gene behaviors, ultimately contributing to the conditions associated with autism and ADHD.
Dr. Dufault created a curriculum that has been successfully utilized in three different clinical trials, helping parents learn how to avoid heavy metal exposures in the ultra-processed food supply while also improving their nutrient intake, a focus echoed by various food research institutes.
